PROBLEM TO BE SOLVED: To produce an anticarigenic seasoning which tastes good while having strong anticarigenic property, and keeps flavors even when added to food without using an expensive and complex device.
SOLUTION: Tuna is steamed to obtain steamed meat and collect the broth. The steamed meat is added to the broth, and heated to extract the tuna extract. The obtained extract is included as a component of the seasoning. When extracting the tuna extract, the steamed meat is steamed at 70-90°C for 15 min or more, and at 50°C for 120 min or more.
