The invention relates to the food industry, and specifically to food products containing biologically active substances intended, in particular, for enriching the diet so as to provide the human body with all necessary and assimilable macro- (proteins, fats, carbohydrates, mineral elements, amino acids, etc.) and micronutrients (microelements, vitamins, ferments, enzymes, etc.). The aim of the invention consisted in creating a method for producing a concentrate of a nonalcoholic beverage exhibiting higher biological activity, by means of maximally extracting all components of pollen grains (of a pollen load). The aim is achieved in a method for producing, from products of beekeeping, a concentrate of a nonalcoholic beverage exhibiting higher biological activity and containing honey, pollen load, citric acid and water, and consisting in: adding, to a 14-18 mass-percent aqueous solution of citric acid with a concentration of 5-8%, a 4-16 mass-percent pollen load, mixing and infusing over the course of 0.5-10 hours, then mixing the infused mixture and introducing into 60-80 mass-percent honey which has been preheated to a temperature not exceeding 60°C, and mixing again.Linvention concerne lindustrie alimentaire et notamment des produits alimentaires contenant des substance biologiquement actives destinées notamment à enrichir la ration alimentaire de manière à fournir à lorganisme humain tous les macro-substances nutritives nécessaires et facilement assimilables (protéines, lipides, glucides, éléments minéraux, acides aminés, etc.) ainsi que les micro-substances nutritives (micro-éléments, vitamines, enzymes, ferments, etc.). Le but de linvention consiste à créer un procédé de production dun concentre de boisson non alcoolisée possédant une activité biologique élevée grâce à une extraction maximale possible de tous les composants de grains de pollen (pelotes de pollen de fleur).
