PURPOSE: Pickled peach slices having excellent chewing texture, and a producing method thereof are provided to offer the improved taste of the pickled peach slices by mixing sauce with fresh unripe peach slices.CONSTITUTION: A producing method of pickled peach slices comprises the following steps: thinning out peaches 40 days after the blossoming season of peach flowers(S100) washing the obtained unripe peaches with 10% salt water for removing the fuzz from the skin of the peaches(S200) pouring a mixture of 70-80 deg C soy sauce and salt water to the peaches for firstly pickling, and separating a first pickling liquid mixture after cooling(S300) boiling the first pickling liquid mixture for sterilizing, and cooling at 20-30 deg C pouring the cooled first pickling liquid mixture to the firstly pickled peaches, and separating a second pickling liquid mixture(S400) cutting the secondly pickled peaches into 4-8 slices, and removing the moisture(S500) and mixing the peach slices with red pepper paste sauce(S600).
