PROBLEM TO BE SOLVED: To provide processed tea leaves capable of extraction up to a fixed concentration in a short time, and being optimum to a tea-server, a tea-bag or the like not generating clogging of a filter, excess extraction or the like； and to provide a production method thereof, and an extractability improvement method.SOLUTION: In a production process of processed tea leaves including a cutting deactivation step, a first drying step, a compression binding step and a second drying step, a tea component compression bound beforehand is allowed to adhere to a tea leaf surface and a proper gap is secured, to thereby obtain granular processed tea leaves in which an extraction rate is improved, and further clogging of a filter or excess extraction is suppressed.SELECTED DRAWING: Figure 2【課題】短時間で一定の濃度まで抽出が可能であり、且つフィルターへの目詰まりや過抽出等が生じないティーサーバーやティーバッグ等に最適な加工茶葉その製造方法、並びに抽出性向上方法を提供することを目的とする。【解決手段】加工茶葉の製造過程において、切断失活工程、第一乾燥工程、圧搾結着工程及び第二乾燥工程を備えることによって、予め圧搾結着した茶成分を茶葉表面に付着させ、適度な空隙を確保することで、抽出速度が向上し、更にはフィルターへの目詰まりや過抽出が抑制された顆粒状の加工茶葉を得ることができる。【選択図】図２
