PURPOSE: A garlic powder composition containing abundant amount of minerals, and a producing method thereof are provided to prevent the loss of nutrients of the garlic powder. CONSTITUTION: A producing method of garlic powder composition containing abundant amount of minerals comprises the following steps: peeling garlic, and sterilizing the garlic with sterilizing water containing sodium hypochlorite; granulating the garlic into the size of 1-3mm; pulverizing the parts of granulated garlic to obtain garlic powder; mixing the garlic powder with granulated garlic, ginger powder, parsley, and black pepper flake; firstly steaming the mixture using 120-150 deg. C steam for 5-10 minutes; mixing the steamed mixture with Salicornia herbacea; soaking the mixture in distilled water; adding bay salt into the mixture, and secondly steaming the mixture using 110-120 deg. C for 5-10 minutes; and vacuum-drying the obtained composition to reduce the moisture of the composition less than 7%(w/w).본 발명은 마늘분말 조성물 및 이의 제조방법에 관한 것으로 더욱 상세하게는 마늘의 껍질을 탈피하고 소독하여 마늘분태 및 가루를 제조한 후 생강가루와 파슬리와 후추후레이크를 혼합하여 1차 증숙시킨 후 함초와 천일염을 혼합하여 2차 증숙시킨 후 진공 건조하는 단계로 구성된다.본 발명에 의한 마늘분말 조성물은 미네랄 성분이 풍부하고 쉽게 경화되지 않고 녹변현상이 발생되지 않는 장점이 있다.
