PURPOSE: A browning inhibiting composition for fruits and vegetables, and a browning inhibiting method using thereof are provided to enable users to safety use the composition without toxicity. CONSTITUTION: A browning inhibiting composition for fruits and vegetables contains 0.01-1wt% of chitosan, 1-3wt% of cornus officinalis extract, 1-3wt% of cysteine, 1-3wt% of citrate, and the balance of water. The easily browning fruits and vegetables are processed with the browning inhibiting composition, a KIF composition by spraying the KIF composition or dipping the fruits and vegetables into the KIF composition for 10 seconds-5 minutes, and are stored and distributed at 0-10 deg C.본 발명은 과일, 채소류의 갈변억제제인 KIF 조성물 및 이를 이용한 과채의 갈변을 억제하는 방법에 관한 것이다. 보다 구체적으로는 키토산(chitosan), 산수유 추출물, 시스테인(Cysteine), 시트르산염(Citrate)을 포함하는 갈변 억제제, KIF 조성물 및 이를 이용한 과일, 채소류 갈변 억제 방법에 관한 것이다.
