The present invention provides a process for the production of extract of teas, which comprises following steps: adding amylase, enzymatic preparations having the enzyme activity of polygalacturonase of 20000 U/g or more and cellulose derived from Trichoderma longibrachiatum or Trichoderma reesei into the teas and performing an extraction process. According to the process of the present invention, it can extract cell wall components, which can not be completely decomposed from a tea leaf by using an enzyme extraction in the past and derives from a tea leaf. The result can obtain the extract of teas of a high yield, which richly contains sweetness, body and freshness and has no an astringent taste.本發明提供一種茶類萃取物之製造方法,其係包括下列步驟:對茶類原料添加澱粉酶、具有20000 U/g以上的聚半乳糖醛酸酶活性之酵素製劑、及來自於長枝木黴(Trichoderma longibrachiatum)或里氏木黴(Trichoderma reesei)之纖維素酶並進行萃取。依照本發明之方法,可以萃取以往對於茶葉進行的酵素處理萃取中無法完全分解、萃取的來自於茶葉的細胞壁成分,其結果能以高產率獲得富有甘味、濃味及鮮味且澀味少的茶類萃取物。
