The present invention provides a process for the production of extract of teas, which comprises following steps: adding protease, tannase and cellulose derived from Trichoderma longibrachiatum or Trichoderma reesei into the teas and performing an extraction process. According to the process of the present invention, it can extract cell wall components, which can not be completely decomposed from a tea leaf by using an enzyme extraction in the past and derives from a tea leaf, and an extractible protein associated with decomposed cell well components can further decompose into amino acid. The result can obtain the extract of teas of a high yield, which contains an amino acid-rich component and has sweetness, body and freshness.本發明提供一種茶類萃取物之製造方法,其係包括下步驟:對茶類原料添加蛋白酶、單寧酶及來自於長枝木黴(Trichoderma longibrachiatum)或里氏木黴(Trichoderma reesei)之纖維素酶而進行萃取處理。依照本發明之方法,可以萃取以往對於茶葉進行的酵素處理萃取中無法完全分解、萃取的來自於茶葉的細胞壁成分,且可將伴隨細胞壁成分分解而變得可萃取的蛋白質進一步分解成胺基酸,其結果能以高產率獲得富含胺基酸成分且富有甘味、濃味及鮮味的茶類萃取物。
