The present invention relates to a method for preparing cutlets using scorched rice, and more particularly, to a method for preparing cutlets by coating cutlet raw materials coated with batter with scorched rice crumbs for frying and then crying the cutlet raw materials, thereby maintaining the crispiness for a long time without the batter on the cutlets being soggy over time, and providing the savory taste of the scorched rice to the cutlets.본 발명은 누룽지를 이용한 커틀릿의 제조방법에 관한 것으로, 보다 상세하게는 튀김옷을 입힌 커틀릿용 원료에 누룽지 튀김가루를 입혀 유탕처리함으로써 시간 경과에 따라 튀김옷이 눅눅해지는 현상 없이 오랜 시간 바삭함을 유지할 수 있으며, 더불어 누룽지의 구수한 맛까지 가미된 누룽지를 이용한 커틀릿의 제조방법에 관한 것이다.
