PROBLEM TO BE SOLVED: To provide a method for effectively controlling gushing in sparkling beverage.SOLUTION: The method for controlling gushing in sparkling beverage includes obtaining correlation between conditions for addition of bitter-taste material derived from hop and the extent of the gushing after adding the bitter-taste material in production of the sparkling beverage. The method may further include determining the condition for the addition of the bitter-taste material in production of the sparkling beverage based on the correlation. The method may further include using the bitter-taste material under the determined condition for the addition to produce the sparkling beverage.
