The present invention relates to a method for producing a refined product, which comprises the following steps: (a) providing a refining product ingredient, (b) kneading the refining product ingredient and adding dry ice to the refining product to control the temperature thereof within a first set temperature range, and (c) forming a refined product. According to this invention, the method for producing a refined product uses dry ice to rapidly absorb the thermal energy generated during the kneading in order to stabilize the temperature and reduce protein denaturation phenomenon in the process of kneading and increase the flavor. Moreover, the refined product produced by the method of this invention can be chewy and tasteful without the need of adding other food additives, thereby improving the food safety of the refined product.本發明係關於煉製品之製造方法,其包括以下步驟:(a)提供煉製品原料;(b)擂潰煉製品原料,且加入乾冰於煉製品原料中,以將煉製品原料之溫度控制於一第一設定溫度範圍;及(c)成形為煉製品。本發明煉製品之製造方法利用乾冰將擂潰所產生的熱能迅速吸收,以穩定擂潰過程中之溫度,減少蛋白質在擂潰過程中產生變性現象,以增加口感。並且,利用本發明煉製品之製造方法,不需再添加其他的食品添加物,即可具有Q彈口感,提高煉製品之食品安全。
