The present invention relates to a dough composition using a flower stalk extract of nipa palm, and to a production method thereof. More specifically, the dough composition contains the flower stalk extract of nipa palm, and grain powder which contains at least one among flour, rice powder, brown rice powder, and soybean powder. Owing to antioxidant activities of the flower stalk extract of nipa palm, the dough composition ensures excellent storability since spoilage and deterioration are avoided.
