[Problem] To provide a red colorant obtained from both an iridoid compound and a protein hydrolyzate, the red colorant being capable of stably retaining the color even in acidic liquids and having better light resistance, and a process for producing the red colorant.[Solution] A process for producing a red colorant which comprises reacting an iridoid compound that has a carboxyl group at the 4-position of the iridoid framework with a protein hydrolyzate, characterized in that as the protein hydrolyzate, use is made of a hydrolyzate in which the total proportion of alanine, glycine, and proline in the composition of all amino acids contained in the hydrolyzate is 30 wt% or more.L'invention a pour objectif de fournir un colorant rouge obtenu à la fois à partir d'un composé iridoïde et d'un hydrolysat protéique, le colorant rouge étant apte à conserver de façon stable la couleur même dans des liquides acides et ayant une meilleure résistance à la lumière, et un procédé de production du colorant rouge. L'invention concerne un procédé de production d'un colorant rouge qui comprend la mise en réaction d'un composé iridoïde qui a un groupe carboxyle à la position 4 du cadre iridoïde avec un hydrolysat protéique, caractérisé en ce que, en tant qu'hydrolysat protéique, on utilise un hydrolysat dans lequel la proportion totale d'alanine, de glycine et de proline dans la composition de tous les acides aminés contenus dans l'hydrolysat est de 30 % en poids ou plus.【課題】酸性液中であっても安定した発色を維持でき、且つより耐光性に優れたイリドイド化合物及びタンパク加水分解物を用いた赤色素およびその製造方法を提供する。 【解決手段】イリドイド骨格の４位にカルボキシル基を有するイリドイド化合物とタンパク加水分解物とを反応させて赤色素を製造する方法であって、前記タンパク加水分解物として、該分解物に含まれる全アミノ酸組成に占めるアラニン、グリシンおよびプロリンの合計比率が３０重量％以上のものを用いたことを特徴とする。
