The present invention relates to a red pepper paste using pieces of rice and a manufacturing method thereof. According to the present invention, the method for manufacturing a rice red pepper paste comprises the steps of: preparing pieces of rice by splitting whole rice and processing the same; increasing pieces of rice after immersing the same and adding water; and making rice koji by inoculating and incubating koji mold into the increased pieces of rice. The present invention properly controls surface viscosity of the increased pieces of rice through controlling water content, and can produce the rice red pepper paste with improved production efficiency through reduction of the ripening days of rice koji.본 발명은, 통쌀을 쪼개어 가공하는 조각쌀 준비 단계; 침지 또는 가수 후, 조각쌀을 증자시키는 증자 단계; 및 증자된 조각쌀에 국균을 접종 및 배양하여 쌀 코오지를 만드는 제국 단계;를 포함하는 쌀 고추장 및 이의 제조방법에 관한 것이다.
