PURPOSE: Noodles with the excellent storage property, and a producing method thereof are provided to secure the unique color, taste, flavor, and texture of the noodles. CONSTITUTION: A producing method of noodles with the excellent storage property comprises a step of mixing flour with highly activated calcium and alcohol. 100parts of flour by weight is mixed with 0.01~0.2parts of highly activated calcium by weight and 3~7parts of alcohol by weight. The highly activated calcium is obtained by drying, crushing, and electrolyzing seashells.본 발명은 고활성칼슘 및 알코올을 포함하여 이루어지는 저장성이 우수한 면(noodle, 麵)의 제조 방법 및 이를 이용하여 제조된 면에 관한 것이다.본 발명에 따르면, 면 고유의 색, 맛, 향 등의 기호도 및 조직감의 변화없이 저장성이 현저하게 향상된 면을 제조할 수 있다.
