PROBLEM TO BE SOLVED: To provide a method for saccharifying vegetable or fruit by which saccharification reaction of the vegetable or the fruit is effectively accelerated and sugar content thereof is increased in a short period of time, and to provide a saccharification device.

SOLUTION: The method for saccharifying vegetable such as potato or fruit such as astringent persimmon comprises: housing the vegetable or the fruit in a pressure-resistant vacuum chamber 11 and heating the vegetable or the fruit with steam from a steam pipe 23 followed by exposing the vegetable or the fruit alternately in high vacuum environment and low vacuum environment using a vacuum unit 19 in heating condition with a steam heater 24 to perform saccharification while accelerating decomposition of polysaccharides falling in the vegetable or the fruit. The high vacuum environment is such as to have a gauge pressure of -40 to -98 kPa and a period of time for 5-30 min, and the low vacuum environment is such as to have a gauge pressure of 0 to -20 kPa and a period of time for 5-30 min. The frequency of repetition of the high vacuum environment and the low vacuum environment is 2-10 times. The heating condition is preferably established so as to maintain a temperature of 50-90°C.
