PROBLEM TO BE SOLVED: To provide a fruit processing product and a method for manufacturing the same, the product that has a good flavor such as color, taste, texture and fragrance, can be processed at low cost, and enables room-temperature preservation.SOLUTION: A method for manufacturing a vacuum wrapper enabling room temperature preservation comprises: a step of performing vacuum packing of fruit and manufacturing a vacuum wrapper a step of heating the vacuum wrapper to 65°C by a rate of temperature increase at least 5°C/m or more a step of further heating the vacuum wrapper and retaining it for at least 8 minutes at 85°C or more and a step of cooling the vacuum wrapper to 60°C by a cooling speed of at least 6°C/m or more. The vacuum wrapper is formed by sealing the fruit retaining the hardness of raw fruit materials at least 30% or more. According to the present method, the fruit free from corruption and deterioration and having a good flavor such as color, taste, texture and fragrance for a long term, even if stored at a normal temperature can be manufactured at low cost without using a preservative and syrup.SELECTED DRAWING: Figure 2
