PROBLEM TO BE SOLVED: To provide an iron adsorption and/or absorption agent applicable to removal of iron in production of a beverage such as fruit juice, and of an alcoholic beverage or the like； and also to provide a method for removing iron effectively from water containing the iron, or a manufacturing solution for a material solution, in a manufacturing step or the like of producing the beverage, such as fruit juice and the alcoholic beverage, by use of the iron adsorption and/or absorption agent.SOLUTION: The iron adsorption and/or absorption agent is constituted of a residue of a yeast enzyme processing as its active ingredient. As the yeast residue of the active ingredient of the iron adsorption and/or absorption agent, a heavy liquid fraction is used which subsides by a low speed centrifugal separation out of the residues of the enzyme-processed yeast. The method uses the iron adsorption and/or absorption agent, and makes them come into contact with a solution containing iron, and adsorb and/or absorb the iron in the solution to remove the iron in the solution. The iron adsorption and/or absorption agent is applicable to the removal of the iron in the production of the beverage such as fruit juice, and of the alcoholic beverage or the like, and also is low-cost.【課題】果汁飲料等の飲料や、酒類等の製造に際しての鉄分の除去に適用できる鉄吸着及び／又は吸収剤を提供すること、及び、該鉄吸着及び／又は吸収剤を用いて、果汁飲料等の飲料や、酒類等の製造工程等において、鉄を含有する用水や、原料溶液の製造溶液から、効果的に鉄分を除去する方法を提供すること。【解決手段】酵母酵素処理残渣を有効成分とする鉄吸着及び／又は吸収剤からなる。該鉄吸着及び／又は吸収剤の有効成分である酵母残渣としては、酵母を酵素処理した残渣のうち低速の遠心分離によって沈降する重液画分を用いることができる。また、本発明は、該鉄吸着及び／又は吸収剤を用い、鉄を含有する溶液に、該鉄吸着及び／又は吸収剤を接触処理して、溶液中の鉄分を吸着及び／又は吸収させ、溶液中の鉄分を除去する方法からなる。本発明の鉄吸着及び／又は吸収剤は、果汁飲料等の飲料や、酒類等の製造に際しての鉄分の除去に適用でき、更に、コスト的にも安価な鉄吸着及び／又は吸収剤である。【選択図】なし
