The present invention provides a Noni (Morinda citrifolia) fermented juice broth and deodorization and preservation of the preparation method thereof. The preparation method comprises the steps of: natural air drying the noni fruit after cleaning to remove fruit surface water and get the mature noni fruit using thickness of the separator to remove the seed of the mature noni fruit and putting the fruit into an Aerated fermenters and fermenting in 24~30℃, 1~2 days then putting the fruit into a closed fermentor and fermenting in 24~30℃, 18~28 days and centrifuging to get a first solution adding based compounds to get a second solution and adjusting the pH thereof to 6.5~7 and centrifuging the second solution to remove residue and step heating in 60~70℃ in water bath and then get noni fermented juice broth.本發明係揭露一種諾麗果發酵液及其除臭及保存之製備方法。其製備方法包含下列步驟:將諾麗果實洗乾淨後自然風乾以除去水果表面之水份,以得熟化諾麗果實、將熟化諾麗果實使用粗細分離機以去除種子,置於曝氣式發酵桶內,於24℃~30℃溫度下發酵1~2天、接著置於密封式發酵槽內,於24℃~30℃溫度下發酵18~28天,以離心後得到第一溶液;再添加鹼性化合物以取得第二溶液,並調整其pH值為6.5~7;最後再以離心後,以60~70℃之溫度逐步加熱,進而得到諾麗果發酵液。S11~S17...步驟
