The invention provides a method for screening preference components for eel, which includes: (a) a step of contacting a heterodimer from a member of the eel containing any member of the T1R2 family of taste receptors and any member of the T1R3 family with a candidate substance of a preference component； and (b) A step of evaluating candidate substances that increase the activity of the heterodimer as a preference component.本發明提供一種篩選用於鰻魚之嗜好性成份之方法，其包括：(a)使來自鰻魚之包含味覺受體T1R2家族之任一成員及T1R3家族之任一成員之異質二聚物與嗜好性成份之候選物質接觸之步驟；及(b)將使異質二聚物之活性增大之候選物質評價為嗜好性成份之步驟。
