PROBLEM TO BE SOLVED: To provide a method for producing collagen by using the head part of an eel, and the collagen.SOLUTION: This method for producing the collagen by using the head part of the eel is provided by comprising a separation process S1 of separating the head part and barrel part from the fish body of the eel, a water content-removing process S2 of removing the water content of separated head part of the eel, a crushing process S3 of crushing the head part of the eel removed with the water content as powdery state and an extracting process S4 of extracting the collagen from the crushed eel powder.
