The present invention relates to a method for preparing barley syrup usable for traditional and processed foods by using a barley-saccharified liquid. The purpose of the present invention is to help the health promotion of modern people by allowing the modern people to consume barley syrup rich in beta-glucan. The method of the present invention comprises: a malt preparation step (S1) of sprouting and drying barley to prepare malt; a barley-saccharified liquid preparation step (S2) of mixing malt water, in which malt powder is dissolved in water, with barley powder porridge, followed by filtration to prepare a barley-saccharified liquid; and a barley syrup preparation step (S3) of heating a mixture, in which 66.7 wt% of the barley-saccharified liquid is mixed with 26.7 wt% of oligosaccharide and 6.6 wt% of a lemon liquid, to prepare barley syrup.본 발명은 보리당화액을 이용하여 전통식품 및 가공식품에 사용될 수 있는 보리시럽의 제조방법에 관한 것이다. 본 발명의 특징은, 내보리에 싹을 틔게 하고 말려서 엿기름을 제조하는 엿기름제조단계(S1)와, 엿기름분말을 물에 녹인 엿기름물과 보리가루죽을 혼합하고 걸러서 보리당화액을 제조하는 보리당화액제조단계(S2)와, 보리당화액 66.7중량%와, 올리고당 26.7중량%와, 레몬액 6.6중량%가 혼합된 혼합물을 가열하여 보리시럽을 제조하는 보리시럽제조단계(S3)를 포함한다.
