The present invention relates to a method for producing a drink containing an extract of leaves of Hinoki Cypress which includes phytoncide and, more specifically, to a method for producing a drink containing an extract of leaves of Hinoki Cypress and a drink and food containing an extract of leaves of Hinoki Cypress produced by the method, wherein the drink is prepared by the following steps: producing the extract of the leaves of Hinoki Cypress under an optimized extracting condition after steaming or blanching the dried leaves of Hinoki Cypress filtering the same and then adding an antioxidant agent and minor ingredients filling with liquid nitrogen to prevent mixing and contacting with air and sterilizing and cooling thereafter.
