PROBLEM TO BE SOLVED: To provide an inexpensive liver sashimi-like food in which appearance, texture and taste are close to those of cattle liver sashimi, and a seasoning capable of realizing the liver sashimi-like food.SOLUTION: Provided is a seasoning 1 including a mixture of a soy sauce malt 3 and sesame oil 4 as the main component, and further including soy sauce. In the seasoning 1, the one including the soy sauce malt 3 by 35 to 50 wt.% to the whole of the seasoning and including the sesame oil 4 by 40 to 55 wt.% to the whole of the seasoning is preferable. A liver sashimi-like food 6 is the one obtained by putting the seasoning 1 and slice green onions 5 or the like to the slice piece 2 of the chiai meat of tuna. As the chiai meat to form into the base of the slice piece 2, the one obtained by being soaked into the seasoning 1 and being preserved at 1 to 4°C is preferable.SELECTED DRAWING: Figure 2COPYRIGHT: (C)2017,JPO&INPIT【課題】見た目、食感、味が極めて牛のレバ刺しに近似しているとともに安価なレバ刺し様食品、およびこのレバ刺し様食品を実現し得る調味料が望まれている。【解決手段】この調味料1は、醤油麹3とゴマ油4の混合物を主成分として含み、更に醤油を含んでいる。調味料1において、醤油麹3を調味料全体の35重量%以上50重量%以下含み、ゴマ油4を調味料全体の40重量%以上55重量%以下含んで成るものが好ましい。レバ刺し様食品6は、マグロの血合肉のスライス片2に調味料1とスライスネギ5などをかけて得られたものである。スライス片2の基になる血合肉は、調味料1中に漬け込まれて1℃以上4℃以下に保存されたものが好ましい。【選択図】図2
