PROBLEM TO BE SOLVED: To provide a method for producing a food material as a substitute of meat, capable of obtaining palate feeling and taste of meat, and good for health by using devils tongue as the main material.SOLUTION: This method for producing the food material as a substitute of meat includes thawing frozen devils tongue, pressurizing or compressing the thawed devils tongue to dehydrate most water and bring into devils tongue pieces with less water content, adding and mixing one kind or a plurality kinds of binding materials to the devils tongue pieces, shredding the devils tongue pieces with a shredding mixer to bring to shredded pieces, mixing and stirring the shredded pieces and the binding material(s) to make a mixture, further adding and mixing one kind or a plurality kinds of protein-based insoluble food with the mixture, and mixing and stirring the product with a stirrer.COPYRIGHT: (C)2010,JPO&INPIT【課題】こんにゃくを主要な材料として使用して、肉の食感と食味を得ることができると共に、健康にもよい肉代替食品素材の製造方法である。【解決手段】冷凍したこんにゃくを解凍した後、該解凍したこんにゃくを加圧、または圧縮して水分をほとんど脱水して、含水量の少ないこんにゃく片とし、且つ該こんにゃく片に対して、1種類、または複数種類のつなぎ材を添加混入して、細断混合機で、前記こんにゃく片を細断して細断片化すると共に、該細断片と前記つなぎ材とを混合撹拌して混合物し、然る後、前記混合物に対して、更に1種類、または複数種類のたんぱく系の非水溶性食品を添加混入し、攪拌機で混合撹拌して肉代替食品素材を製造する。【選択図】なし
