A manufacturing method of a red ginseng extract and a red ginseng slice using a blueberry extract, which comprises the steps of: pretreating fresh ginseng as removing roots or cutting and preparing after washing fresh ginseng with refined water and removing foreign substances； steaming the pretreated fresh ginseng at 80-90°；C for 1-2 hours； immersing the steamed fresh ginseng in the manufactured solution by mixing a blueberry concentrate solution in a mixed solution of water, low sugar, oligosaccharide, and fruit sugar； and manufacturing a red ginseng extract and a red ginseng slice using a blueberry extract as drying the immersed red ginseng extract or red ginseng slice. A manufacturing method of the present invention with less sweet taste can be easy for intake of a user by manufacturing with a blueberry concentrate solution in comparison with generally manufactured red ginseng extract or slice. In addition, addition of unique taste and flavor of blueberry and relieving a bitter taste of red ginseng can improve palatability, and can be effectively used as a health food with improved functionality comprising active ingredients of blueberry.본 발명의 블루베리 농축액을 이용한 홍삼 정과 및 절편의 제조방법은, 수삼을 정제수로 세척하여 이물질을 제거한 다음 미를 제거하고 통째로 또는 절단하여 준비하는 수삼 전처리 단계: 상기 전처리된 수삼을 80 ~ 90 ℃에서 1 ~ 2시간 동안 증숙하는 단계: 물, 저당, 올리고당 및 과당 혼합액에 블루베리 농축액을 혼합하여 제조한 당액에 상기 증숙된 수삼을 당침하는 단계: 및 상기 당침된 홍삼 정과 또는 절편을 건조하여 블루베릴 농축액을 이용한 홍삼 정과 또는 절편을 제조하는 단계를 포함한다.본 발명의 제조방법은 종래에 당업계에서 일반적으로 제조되는 홍삼 정과 또는 절편에 비해 블루베리 농축액을 혼합하여 당액을 제조함으로써 단맛이 강하지 않아 쉽게 물리지 않아 소비자들의 섭취가 용이하며, 블루베리의 독특한 맛과 향이 가미되어 홍삼의 쓴맛이 완화되고 청량감이 부여되어 기호도가 향상될 뿐만 아니라 홍삼 및 블루베리의 유효성분이 함유되어 기능성이 향상된 건강식품으로의 활용도가 탁월하다.
