The present invention provides a process for the production of extract of teas, which comprises following steps: (i) recovering aromas from raw materials of teas by using steam distillation, (ii) treating a distillation residue by enzyme to obtain an enzyme-treated extract, and (iii) mixing the enzyme-treated extract obtained in (ii) and the recovered aromas obtained in (i). Thereby, the extract of teas, having an aroma of naturalness, freshness and richness, a taste of a strongly clear sweetness and freshness, few mixed flavor, no-bitterness and a refreshing flavor, is obtained from raw materials of teas.本發明提供一種茶類萃取物的製造方法,藉由(i)利用水蒸氣蒸餾法從茶類原料回收香氣;(ii)對於蒸餾殘渣進行酵素處理而獲得酵素處理萃取物;(iii)混合於步驟(ii)獲得的酵素處理萃取物與於步驟(i)獲得的回收香氣,而從茶類原料製造具有天然、新鮮、豐富的香氣,而且有強烈的清新甘味或清新鮮味,且雜味少、無苦味,具有清爽風味的茶類萃取物。
