To provide a method of producing a tea product of new flavor rich in flavor variety by harmonizing flavors of at least two or more tea kinds of green tea, half-fermented tea and fermented tea.SOLUTION: A method of producing tea leaves containing a flavor of any one of green tea and half-fermented tea, or flavors both thereof, and a flavor of fermented tea in harmony by promoting a flavor change due to an action of an active residual enzyme, by mixing tea leaves of which endogenous enzyme is inactivated and tea leaves in which activity of endogenous enzyme remains, irrespective of the presence of a wilt step, in a roughly drying step or a rolling step in a green tea producing process, or a method of producing tea leaves containing flavors of green tea and half-fermented tea in harmony by mixing tea leaves in which an endogenous enzyme is inactivated, and tea leaves in which the endogenous enzyme is inactivated after the wilt step in a roughly drying step or a rolling step.【課題】本発明の目的は、緑茶、半発酵茶、発酵茶のうち、少なくとも2種類以上の茶種の香味を調和して含有する香味バラエティに富んだ新香味の茶製品を製造する方法を提供することにある。【解決手段】緑茶製造工程における粗揉又は揉捻工程において、萎凋工程の有無に関わらず、内在性酵素を不活化した茶葉と、内在性酵素の活性が残存する茶葉を混合し、活性残存酵素の作用により、香味変化を促すことで、緑茶、半発酵茶のいずれか、又は両方の香味と、発酵茶の香味を調和して含有する茶葉を製造する方法、又は、内在性酵素を不活化した茶葉と、萎凋工程後に内在性酵素を不活化した茶葉を、前記粗揉又は揉捻工程で混合することで緑茶及び半発酵茶の香味を調和して含有する茶葉を製造する方法を提供する。
