To provide an oak natural additive material that more strongly accelerates the transition of flavor, aroma and color of an old barrel material to other beverage foods, beverage materials and drinking water by means of smoke processing/boiling processing by utilizing an old barrel having been used for whiskey aging and wine aging.SOLUTION: An oak natural additive material 3 or an oak natural liquid additive material 7 is used for adding an aroma and a hue of amber of an oak material to beverage foods, beverage materials, drinking water or the like 2 by immersing or inserting an oak woody material thereinto. The oak natural additive material 3 serves to extract lignin and tannin formed in a ligneous matter 3a composed of an oak old barrel and included in the oak material (old barrel) efficiently in a short period and the oak flavor can be produced more strongly by smoking for enhancing deeper aroma and hue in which ozone sterilization is essential.SELECTED DRAWING: Figure 1【課題】 ウイスキー醸成及びワイン醸成に使用された古樽を利用し、燻製・煮沸加工で古樽材の風味・香り・色を他の飲料食品、飲料材、飲料水に遷移をより強くさせるオーク自然添加材を提供する【解決手段】 オーク自然添加材3またはオーク自然液体添加材7は、飲料食品、飲料材、飲料水2等にオーク木質材を浸漬または挿入してオーク材の香気や琥珀色の色味を添加するものであり、オーク自然添加材3は、オーク古楢からなる木質体3aに形成されオーク材(古楢)に含まれるリグニンやタンニンを短期間で効率よく引き出し、より深い香気や色味を増す為に燻製化する事により、オーク風味をより強く醸し出すことができる。但し、オゾン殺菌は必須である。【選択図】図1
