PROBLEM TO BE SOLVED: To provide a production method of semi-material frozen fish, the method that can provide safe and secure fish food sterilized thoroughly, and can provide delicious fish side dishes being soft and juicy without smell of fish by only little labor and time.SOLUTION: A production method of a semi-material frozen fish that becomes a state capable of being eaten and cooked by microwave heating or thawing naturally and is used for daily dish or for business is provided. The production method of the semi-material frozen fish is characterized as follows: raw material fish is pickled for 30 minutes or more in an alkaline aqueous solution of pH 8.0-12.5 under an atmospheric pressure ambient temperature the alkali-treated fish is arranged in a heat treatment space as a half opening space containing a portion of a conveyor line surrounded by partition plates any one of the ordinary pressure superheated steam or the saturated vapor is supplied from many nozzle injection ports of the heating device so that the ambient temperature of the heat treatment space may be held for 5-60 minutes in a range of 90-300°C the whole fish is subjected to heat sterilization by this and the heat sterilization-treated fish is quickly freezed to a temperature of -18°C or less.SELECTED DRAWING: Figure 1
