PROBLEM TO BE SOLVED: To provide a method for efficiently producing a food containing a freeze-dried foodstuff which is easily reconstituted by adding cold water, milk, etc. and to provide the food containing the dried foodstuff.
SOLUTION: There are provided a method for producing the food containing the dried foodstuff obtained by adding 0.01-30 pts.wt. of an acid or its salt and/or 2-100 pts.wt. of ethanol to 100 pts.wt. of the foodstuff and freeze-drying the mixture, and the food containing the dried foodstuff and obtained by the production method.
