The present invention is achieved by providing an apparatus for pickling Korean cabbages, using at least one large-volume tank in a kimchi manufacturing plant. The apparatus for pickling Korean cabbages employs pickling tanks, which stores pickling water having an appropriate salt concentration, provides a storage space for pickling Korean cabbages completely washed, and has a drain pipe formed at one side of the bottom. The pickling tanks are arranged in series at both sides to allow two pickling tanks to configure one set of pickling unit, and at least one line of the pickling units are arranged in parallel. A transport conveyor passes through the center of the pickling units in a cross direction, and supplies the completely washed Korean cabbages to the respective pickling units. A cabbage supply conversion unit is provided between the transport conveyor and each pickling unit, and receives the Korean cabbages conveyed through the transport conveyor and selectively puts the Korean cabbages into one of both pickling tanks. A delivery conveyor is installed at the center of an upper surface of each pickling tank of the pickling unit in a direction crossing the transport conveyor, and delivers the Korean cabbages, which are received from the cabbage supply conversion unit, in a length direction of the pickling tank. An input unit is provided on the delivery conveyor. The input unit moves in the length direction of the pickling tank on rails installed in parallel with the transport conveyor, and drops the Korean cabbages, which are transported on the transport conveyor, at any location in the pickling tank.
