PROBLEM TO BE SOLVED: To provide a method for producing an Ume extract reduced in harsh taste and fully-containing original flavor of Ume fruit.SOLUTION: The Ume fruit is frozen to obtain frozen Ume fruit, and the frozen Ume fruit is immersed in a sugar solution to obtain Ume extract by extraction with sugar.
