The present invention relates to a method for manufacturing a ham using a pork sirloin ham, and hams manufactured by the method. More specifically, provided are the method for manufacturing the ham using clean Jeju Black Pork sirloin as a raw material, thereby maintaining the taste of clean Jeju Black Pork sirloin as well as being health-oriented and having excellent texture； and the ham manufactured by the method. A pork sirloin has characteristics of being heath-oriented by having high protein content and low fat content, but due to a unique dry texture, it carries a disadvantage of having consumers show a low level of satisfaction when the pork sirloin is used to manufacture hams. Accordingly, by providing a ham which maintains the characteristics of being heath-oriented and having excellent texture, the present invention provides the method of manufacturing a ham with high consumer satisfaction and the ham manufactured thereby.본 발명은 돼지 등심햄을 이용한 햄의 제조방법 및 그에 의해 제조된 햄에 관한 것으로서, 더욱 상세하게는 청정 제주흑돼지 등심을 원료육으로 사용하여 청정 제주흑돼지 등심의 맛을 유지하면서도 건강지향적이고, 취식감이 높은 햄의 제조방법 및 그에 의해 제조된 햄을 제공한다. 돼지 등심은 단백질 함량이 높고 지방함량이 적어 건강지향적인 특징을 갖고 있으나, 특유의 퍽퍽한 식감으로 인해 돼지 등심을 이용하여 햄을 제조하는 경우 수요자의 만족도가 낮은 단점이 있다. 따라서 본 발명은 돼지 등심의 건강지향적인 특징은 유지하면서, 취식감이 높은 햄을 제공하여 수요자의 만족도가 높은 햄의 제조방법 및 그에 의해 제조된 햄을 제공한다.
