PROBLEM TO BE SOLVED: To provide a dough and a potato chip.SOLUTION: The dough is produced from a modified starch and a raw material acceptable for food and the modified starch is a pregelatinized waxy corn starch. A method for producing the dough comprises the following steps: a step 1: mixing and stirring the modified starch and the raw material to produce a first material a step 2: mixing and stirring the first material with pre-melted shortening and phospholipid to produce a second material and a step 3: mixing and stirring the second material with an expansive agent, salt, sugar, water and spice.
