A method for the preparation of a starch material, according to the present invention, rely on the thermal treatment of the starch with the use of polar organic solvents, is characterized by that 5÷95% by weight of starch is mixed with an aqueous solution of polar organic solvents at a concentration of 1÷85% by weight, which is eventually a 0.01÷10 wt% emulsifier solution with HLB 8÷20 and is eventually mixed with 5÷95% by weight a 0.01÷10 wt% emulsifier solution with HLB 4÷20 in a non-polar solvent, to achieve 100% by weight of the starch mixture. The mixture is then subjected to the thermal treatment in the temperature range of 60÷220°C over a period of 1 second to 120 minutes with continuous stirring, subsequently the starch mixture is dried. After thermal treatment, the starch mixture may be subjected to texturizing relying on the addition of polar organic solvents or its aqueous solution at a temperature from -20 to +80°C in the concentration range of 30÷85% by weight to the starch mixture. The starch mixture is then concentrated followed by dehydration using lyophilisation or by washing on a filtration device by means of rinsing with polar organic solvent to obtain a 5÷50% by weight residue of polar solvent and/or its aqueous solution and is eventually dried.
