PROBLEM TO BE SOLVED: To provide an extract seasoning having enhanced umami of extracts such as an animal extract, a marine extract, an agricultural extract and a yeast extract, with reduced extract odor, in a simple and stable way; and a seasoning method of foods, capable of imparting excellent umami and rich taste without extract odor to various foods.SOLUTION: The extract seasoning includes extracts such as an animal extract, a marine extract, an agricultural extract and a yeast extract to which whey minerals are added, having enhanced umami of the extracts with reduced extract odor. The seasoning method of foods includes adding the extract seasoning in amount of, preferably, 0.1 to 10 parts by mass to a target food in an amount of 100 parts by mass.【課題】畜産エキス、水産エキス、農産エキス、酵母エキス等のエキス類の旨味が増強され、エキス臭が低減されたエキス調味料を簡単に安定的に提供すること。また、様々な飲食品に、エキス臭を付与することなく、良好な旨味とコク味を付与することができる飲食品の調味方法を提供すること。【解決手段】畜産エキス、水産エキス、農産エキス、酵母エキス等のエキス類に乳清ミネラルを添加してなる、エキス類の旨味が増強され、エキス臭が低減されたエキス調味料。また、対象となる飲食品100質量部に対して該エキス調味料を、好ましくは0.1~10質量部添加することを特徴とする飲食品の調味方法。【選択図】なし
