PROBLEM TO BE SOLVED: To obtain a plant extract of high safety which has antifreeze activity and antibacterial activity.
SOLUTION: The extract containing antibacterial and antifreeze protein is obtained by extracting the leaf of the vegetation of a genus Wasabia japonica in which the cryopreservation is performed. Antifreezing agents, ice crystal controlling agents, and antimicrobials which contain the extract are provided. The quality degradation prevention methods of foods using the agents are provided. Foods containing the agents are provided.
