This invention relates to a pork restructuring method and a mold used thereof. The method comprises the steps of material preparation, massaging, spreading, heating, cooling and cutting, through which pork belly and lean pork can be restructured and combined to effectively use the lean portion of pork and provide restructured pork slices with even fat to lean ratio and required size, thereby achieving the purpose of this invention.
