PROBLEM TO BE SOLVED: To provide a binding kit for meat capable of keeping or improving binding properties of meat to each other or meat with other material and simultaneously attaining softening of a meat texture in producing a meat product, and to provide a method of producing a meat product using the same.SOLUTION: There are disclosed a binding kit for meat, and a method of producing a meat product using the same. The binding kit for meat of the present invention includes a collagenase formulation and a transglutaminase formulation. According to the present invention, taste of meat is improved without impairing binding properties of transglutaminase to meat material, and a meat product having a softened meat texture can be obtained. The binding kit for meat of the present invention can provide a soft taste to a meat product irrespective of meat qualities such as a high rank and a low rank.
