PROBLEM TO BE SOLVED: To provide a fat substitute composition having fat-like sensual characteristics having palatability with body, in spite of containing no fat as the raw material to provide a method for producing the composition and to provide a fat decreased food including the fat substitute composition.SOLUTION: This fat substitute composition includes spheroid particles made by three ingredients of (a) tannic acid, (b) collagen and (c) gum arabic. The particle has an average particle size of 1.0-20.0 μm.
