An object of the present invention is to provide a more efficient steaming method for use in the steaming step during manufacture of steamed noodles and instant noodles and the like. The steaming method for noodle strand groups uses a noodle strand steaming device comprising a conveyor on which noodle strand groups are placed after being cut and which transports the noodle strand groups, and a tunnel-shaped main body section provided such that the noodle strand groups are transported therethrough by the conveyor. The method includes a step of transporting the cut noodle strand groups into the main body section on the conveyor through an inlet section, subjecting the noodle strand groups to steaming for a predetermined time by supplying steam, subsequently continuing steaming of the noodle strand groups without the supply of steam, and then transporting the noodle strand groups to an outlet section. The present invention also provides a noodle strand steaming device that implements this method.本發明之目的為,在生產蒸麵或泡麵中的蒸煮步驟,提供一種可更有效率的蒸煮方法。本發明提供一種麵線蒸煮方法,係使用麵線蒸煮裝置,該麵線蒸煮裝置包含:運送機,將切出後的麵線群載置於其上,並將該麵線群予以運送;以及隧道型本體部,使該麵線群隨著運送機之運送而通過該隧道型本體部。該麵線蒸煮方法包含如下步驟:將該切出後的該麵線群於運送機上運送的同時,由該本體部之入口部搬入,針對該麵線群供應蒸氣以進行既定時間之蒸煮,而後在停止供應蒸氣的狀態下將該麵線群蒸煮,並運送至出口部。
