PROBLEM TO BE SOLVED: To provide a mayonnaise-like food contained in a bottle wherein the mayonnaise-like food can be prevented from deteriorating with time due to oxidation, and the favorable taste can be maintained for a long period of time.SOLUTION: For this mayonnaise-like food contained in a bottle, the bottle is a flexible multi-layer resin bottle having an oxygen barrier resin layer. In this case, the oxygen permeability when the opening of the bottle is sealed is 0.025 ml/day or lower per 100 g of the mayonnaise-like food in the bottle under conditions such that a temperature is 24°C, a relative humidity in the bottle is 95%, a relative humidity on the outside of the bottle is 76%, and an oxygen partial pressure difference in the inside and the outside of the bottle is 1 atm for the mayonnaise-like food contained in the bottle of which the opening is sealed.COPYRIGHT: (C)2002,JPO【課題】マヨネーズ様食品の酸化による経時劣化を防止し良好な風味を長く維持することのできるボトル入りマヨネーズ様食品を提供すること。 【解決手段】ボトル入りマヨネーズ様食品であって、該ボトルが酸素バリア性樹脂層を有する可撓性多層樹脂ボトルであり、ボトルの開口部を封止したときの酸素透過度が、温度24℃、ボトル内相対湿度95%、ボトル外相対湿度76%及びボトル内外の酸素分圧差が一気圧の条件で、ボトル内のマヨネーズ様食品100g当たり0.025ml/日以下であることを特徴とするボトルの開口部が封止されたボトル入りマヨネーズ様食品。
