The present invention relates to a food drying device having a food drying member which reduces time required for drying food by minimizing the relative humidity of air inputted into the food drying device to improve the food drying efficiency, efficiently reduces energy by reusing the heat of discharged air to previously heat the inputted air, and includes a drying chamber (1) having a space unit in which food is arranged and of which the inside is open and a hot air circulation member which supplies hot air to the drying chamber (1) and discharges the hot air from the drying chamber (1). The hot air circulation member includes a supply pipe (6) which is connected to the space unit of the drying chamber (1) and which supplies external air via an air blower (4) blowing external air and includes an inner heating member (5) heating air； a discharge pipe (7) which is connected to the space unit of the drying chamber (1) and which discharges hot air to the outside； a heat exchange member (9) which receives the supply pipe (6) and the discharge pipe (7) and exchanges heat with the pipes； and a moisture removing and heat circulating member (15) composed of a supply evaporator (10) included in the supply pipe (6), a condenser (12), a discharge evaporator (11) included in the discharge pipe (7), a compressor (13), and an extension valve (14).본 발명은 열풍에 의해 식품을 건조하는 건조장치에서 투입되는 공기의 상대습도를 최소화하여 식품의 건조효율을 증대시켜 건조시간을 단축하는 것은 물론 배출되는 배출공기에서 열을 재사용하여 투입되는 투입공기를 예열함으로써 에너지를 효과적으로 절감하도록 식품이 배치되며 내부가 개폐되는 공간부를 가지는 건조실(1)과, 상기 건조실(1)에 열풍을 공급 및 배출하는 열풍순환수단을 포함하여 이루어진 식품건조수단에 있어서； 상기한 열풍순환수단은 상기 건조실(1)의 공간부와 연결되며 외부의 공기를 송풍하는 공급송풍기(4)를 통해 외부의 공기를 공급하며 내부에 공기를 가열하는 가열수단(5)이 구비된 공급관(6)과； 상기 건조실(1)의 공간부와 연결되어 외부로 열풍을 배출하는 배출관(7)과； 상기 공급관(6)과 배출관(7)을 수용하여 열교환 하도록 된 열교환수단(9)과； 상기 공급관(6)에 구비되는 공급증발기(10)와 응축기(12)와 배출관(7)에 구비되는 배출증발기(11)와 압축지(13)과 팽창밸르(14)를 포함하여 이루어진 수분제거겸용열순환부재(15)를 포함하여 이루어진 식품건조장치에 관한 것이다.
