The process of producing fried splitted slipmouth treated with calamansi and garlic comprises the steps of: a. collecting a predetermined number of slipmouth fishes in a containing means; b. splitting the fishes to remove their gills and internal organs; c. cleaning and washing the fishes; d. soaking the fishes in calamansi juice; e. draining the calamansi-treated fishes; f. soaking the drained fishes in garlic concentrate; g. drying the garlic-treated fishes; and h. frying the dried fishes. The product produced by the foregoing process is a fried food item.
