The present invention relates to a method for producing fermented embryo bud of rice and fermented embryo bud of rice produced by the method. The method comprises the steps of: (1) roasting embryo bud of rice； (2) adding water to native grass mixed with steamed rehmannia root, Siberian chrysanthemum, clematis berries, astragali radix, and yellow lacquer to extract the native grass and filtering the native grass extract； (3) fermenting a mixture of Aronia fruit and sugar and filtering the mixture to produce an Aronia fermented broth； (4) mixing the roasted embryo bud of rice of step (1), the native grass extract of step (2), and the Aronia fermented broth of step (3) with lactic acid bacteria to ferment mixture； and (5) drying the fermented embryo bud of rice of step (4).본 발명은 (1) 쌀눈을 로스팅하는 단계； (2) 숙지황, 구절초, 으름, 황기 및 황칠을 혼합한 산야초에 물을 첨가하여 추출한 후 여과하여 산야초 추출물을 제조하는 단계； (3) 아로니아 열매와 설탕을 혼합한 혼합물을 발효한 후 여과하여 아로니아 발효액을 제조하는 단계； (4) 상기 (1)단계의 로스팅한 쌀눈, 상기 (2)단계의 제조한 산야초 추출물 및 상기 (3)단계의 제조한 아로니아 발효액과 유산균을 혼합하여 발효하는 단계； 및 (5) 상기 (4)단계의 발효한 발효 쌀눈을 건조하는 단계를 포함하여 제조하는 것을 특징으로 하는 발효 쌀눈의 제조방법 및 상기 방법으로 제조된 발효 쌀눈에 관한 것이다.
