PROBLEM TO BE SOLVED: To provide a production method of a plant fermentation liquid powder, containing an edible enzyme which is not deactivated and derived from a plant raw material, and a plant fermentation liquid powder.SOLUTION: A production method of a plant fermentation liquid powder comprises: a step for introducing a plant raw material in a non-heated state with sugar into a first container, and extracting a plant extract containing an enzyme derived from the plant raw material from the plant raw material a first fermentation step for, performing fermentation of the obtained plant extract at a first fermentation temperature for preparing a first plant fermentation liquid and a second fermentation step for performing fermentation of the obtained first plant fermentation liquid at a second fermentation temperature, for preparing a second plant fermentation liquid, in this order. The respective processing temperature in the step for extracting the plant extract, the first fermentation step and the second fermentation step is held so as to be equal to or lower than 50°C always, and the first fermentation temperature is 10°C or higher and 50°C or lower, and the second fermentation temperature is a temperature lower than the first fermentation temperature, in a front stage of the first fermentation step, a lactic acid bacterium or yeast is mixed to the plant extract.SELECTED DRAWING: None
