The present invention relates to a method of manufacturing macarons including grains, and more specifically, to a method of manufacturing macarons including grains, using the grains with plentiful nutrients, so as to provide the taste and the nutrition of grains, and the macarons including grains manufactured thereby. According to the present invention, the method comprises the following steps: inserting 40 to 80 parts by weight of egg white into a mixture of 1 to 50 parts by weight of grains and 80 to 160 parts by weight of microgranular sugar with respect to 100 parts by weight of nut powder, and kneading the mixture to acquire dough inserting 70 to 120 parts by weight of meringue with respect to 100 parts by weight of the dough, and mixing the mixture for 1 to 5 minutes to acquire an agitated material inserting the agitated material into a squeeze bag to perform forming and drying baking the formed material at 130 to 160C for 10 to 15 minutes, or preparing filling base inserting 1 to 50 parts by weight of grains with respect to 100 parts by weight of the filling base, and agitating the mixture to prepare filling including the grains and coating the filling on one surface of the macaron and attaching another macaron on the coated filling to coat the filling including the grain between two or more macarons.본 발명은 곡물이 함유된 마카롱(Macaron)의 제조방법에 대한 것으로 보다 상세하게는 견과류 분말 100중량부에 대하여 곡물 1∼50중량부, 미립질당 80∼160중량부의 혼합물에 난백 40∼80중량부를 넣고 반죽하여 반죽물을 얻는 단계상기의 반죽물 100중량부에 대하여 머랭(Meringue) 70∼120중량부를 넣고 1∼5분 동안 교반하여 교반물을 얻는 단계상기의 교반물을 짤주머니에 넣고 성형하고 건조하는 단계 및 상기의 성형물을 130℃∼160℃에서 10∼15분 동안 굽는 단계를 포함하거나,필링베이스(filling base)를 준비하는 단계상기의 필링베이스 100중량부에 대하여 곡물 1~50중량부를 넣고 교반하여 곡물이 함유된 필링을 준비하는 단계 및상기 필링을 마카롱의 일면 상에 도포하고, 도포한 필링위에 마카롱을 붙여서 2개 이상의 마카롱 사이에 곡물이 함유된 필링을 도포하는 단계를 포함하는 것을 특징으로 하는 곡물이 함유된 마카롱의 제조방법 및 동 방법에 의해 제조한 곡물이 함유된 마카롱에 관한 것이다.
