PROBLEM TO BE SOLVED: To provide a freeze-dried Amazake capable of restoring to be drinkable in a shorter time than the conventional freeze-dried Amazake.SOLUTION: The freeze-dried Amazake contains a paste fruit (mango puree etc.). The addition of the paste fruit in place of malted rice further reduces the restoration time. Moreover, by adding the flesh of fruit, a fruit taste is further increased together with the paste fruit. Especially, because a peculiar texture (a grainy feeling) to Amazake that the malted rice possesses can be achieved by the flesh of fruit if the flesh of fruit is added when the paste fruit is used in place of the malted rice, the peculiar texture to Amazake is also obtained.
