Provided is a method for producing, with a high yield, a fat and oil composition which has a high diacylglycerol content and has a favorable appearance at room temperature. This method for producing a refined fat and oil composition comprises the following steps (1) and (2):(1) a step of adding a polyglycerol fatty acid ester in which an average degree of polymerization of glycerol is 20 or more to a fat and oil composition containing 50 mass% or more of a diacylglycerol, then cooling the mixture, and(2) a step of separating crystals precipitated in the above step from a liquid portion.Cette invention concerne un procédé de production, à un rendement élevé, dune composition de graisse et dhuile ayant une teneur de diacylglycérol élevée et un aspect favorable à température ambiante, ledit procédé de production dune composition de graisse et dhuile affinée comprenant les étapes (1) et (2) suivantes :(1) une étape dajout dun ester dacide gras de polyglycérol, le degré moyen de polymérisation du glycérol étant de 20 ou plus, à une composition de graisse et dhuile contenant 50 % en poids ou plus de diacylglycérol, puis de refroidissement du mélange, et(2) une étape de séparation des cristaux ayant précipité dans létape ci-dessus à partir dune fraction liquide.常温での外観が良好なジアシルグリセロール含有量の高い油脂組成物を収率良く製造することのできる方法の提供。 次の工程(1)及び(2): (1)ジアシルグリセロールを50質量%以上含有する油脂組成物に、グリセリンの平均重合度が20以上であるポリグリセリン脂肪酸エステルを添加し、次いで冷却する工程、 (2)前記工程により析出した結晶を液体部より分離する工程、 を含む、精製油脂組成物の製造方法。
